- 1 cup chopped red onion
- 5 large cloves garlic, crushed
- 2 tablespoons chili powder (to taste)
- 2 cups chopped fresh tomatoes
- 1 (15 ounces) can black beans (Drained)
- 1 cup red wine
- 2 tablespoons extra-virgin olive oil
- 1 cup chopped bell pepper
- 1 cup chopped zucchini
- 2 teaspoons ground cumin
- 1 cup corn kernels
- 1 cup chopped white or portobello mushrooms
- 1.5 teaspoon cayenne pepper (to taste)
- 1 cup chopped fresh cilantro, packed
- 1.5 teaspoon smoked paprika
- Salt and Pepper (to taste)
First, heat the olive oil in a medium-sized pot.
Once heated, add the onion and saute briefly.
