- 1 (4 pound) whole chicken, cut into 4 pieces
- 1 pound hardwood chips
- 1/2 cup brown sugar (packed)
- 1 1/2 cups ketchup
- 1 (12 fluid ounce) beer (your preference)
- 1/4 cup distilled white vinegar
- 1/2 cup red wine
- 1/2 medium onion, diced
- 1 cup diced green bell pepper
- 1 tablespoon black pepper
First, place the wood chips in warm water, and soak for 2 to 3 hours.
Next, preheat the oven to 350 degrees F (175 degrees C).
Afterward, in a small saucepan, blend the ketchup, brown sugar, beer, vinegar, and wine.
Next, mix in the onion, bell pepper, and black pepper.
Finally, Simmer the mixture until thickened, (roughly 10 minutes).
Next, spread the wet wood chips evenly in the bottom of a broiler pan, adding enough water to ensure chips remain moist while cooking.
