- 3 lb butternut squash, (halved, deseeded)
- 2 tablespoons butter
- 1 medium-large onion, sliced
- 1 leek, sliced
- 2 cloves garlic, minced
- 1/8 teaspoon cayenne pepper
- 2 big cans chicken broth
- 2 large russet potatoes (quartered)
- 1/8 teaspoon ground allspice
- Salt and pepper (to taste)
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger (or a small nub of fresh ginger)
- 1/2 cup sherry wine
- 1 cup half-and-half cream
- 1/2 cup sour cream/creme fraiche (optional)
First, preheat the oven to 375 degrees F (190 degrees C).
Next, pour a thin layer of water in a baking dish.
Once the water is in the pan, place the squash halves cut side down on the dish.
