Ingredients

  • 1 tablespoon Olive Oil
  • 5 lb Spanish/Yellow/Or White Onion.
  • 1/2 – 1 Cup thickly sliced bacon.
  • 1/4 teaspoon sugar
  • 2 tablespoons Flour
  • 4 Cups Beef Broth (Of your preference)
  • 1/4 Cup Dry White Wine, or
    Vermouth
  • 1 Teaspoon fresh (or dried) Thyme.
  • Salt and Pepper (To Taste)
  • 1/2 Cup Shredded Aged, Extra Strong Cheddar Cheese
  • Optional: Thickly Sliced French Bread

Preparations

First, heat the olive oil in saucepot. Secondly, add the thickly sliced bacon to the oil.
Next, once the bacon is browned, and fat rendered, add the thinly sliced onions.
Afterward, cover and cook over low heat 15 minutes.
Add the sugar and thyme, and cook over medium heat for another 15 minutes or until onions are golden.
Next, add the flour and stir for 1 minute, until incorporated. Furthermore, add broth and dry white wine or Vermouth.
Heat the pot to a slow boil. Once boiling slowly, cook over low heat 10 minutes.
