Ingredients

  • 1 teaspoon vegetable oil
  • 1 lb hot Italian sausage
  • 5 cloves garlic, minced
  • 1 large onion, diced
  • 2 carrots, diced
  • 1 russet potato, cubed
  • 1 (6 ounces) can tomato paste
  • 5 stalks celery, diced
  • 1 cup red wine
  • 1 (32 fluid ounce) container beef broth
  • 1.5 teaspoons dried oregano
  • 1 (15 ounces) can black beans (rinsed and drained)
  • 1 (28 ounces) can diced tomatoes (or fresh)
  • Salt and Pepper (to taste)
  • 1 cup rotini pasta
  • 1 cup baby spinach leaves
  • large bunch fresh basil (chopped)

Preparations

The Sausage

First, heat the vegetable oil in a large pot over medium heat. Next, Cook the Italian sausages in the hot oil, turning until browned all over (10-15 minutes).
Afterward, set the sausages aside to cool.
Importantly, remove all but 1 tablespoon of rendered fat from the pot.

The Soup

First, stir the garlic, onion, carrot, potato, and celery into the hot fat.
Next, cook until the vegetables are tender and the onion is translucent (approximately 7 minutes).
Afterward, stir in the tomato paste until no lumps remain.
Once smooth, pour in the red wine and bring to a boil over high heat.
Furthermore, cook until the liquid has reduced by half, stirring frequently, getting the brown bits off the bottom of the pan.
Then, add the beef broth, black beans, and diced tomatoes.
When added, reduce the heat to a medium-low, cover, and simmer for 1 hour.

To Finish

Once simmered for an hour, cut the cooled sausage into half-inch slices.
Next, stir the sausage into the soup along with the rotini pasta, spinach, and dried oregano.
Finally, simmer until the pasta is tender, (7-10 minutes).
Lastly, stir in the chopped basil and season to taste with salt and pepper; serve hot!
