- 1 (15 ounces) can kidney beans, rinsed and drained
- 1/2 – 1 cup fresh corn kernels
- 1 (15 ounces) can cannellini beans, drained and rinsed
- 1 green bell pepper, chopped
- 1/2 cup red wine vinegar
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 1/2 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon lemon juice
- 2 tablespoons white sugar
- 1 tablespoon salt
- 1 clove crushed garlic
- 1/4 cup chopped fresh cilantro
- 1/2 tablespoon ground cumin
- 1/2 tablespoon pepper
- chili sauce (to taste)
- 1/2 teaspoon chili powder
First, in a large bowl, combine the beans, the bell peppers, frozen corn, and red onion.
