White Wine Beef Stroganoff

Ingredients

  • 3 tablespoons butter
  • 2 ounces sliced mushrooms (Button, Shitake, etc)
  • 1 large onion, diced
  • 4 cloves garlic, diced
  • 1 1/2 – 2 pounds beef sirloin steak, cubed
  • 1 cup white wine
  • 2 cups beef bouillon
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half cream
  • salt and ground black pepper to taste

Preparations

First, melt the butter in a large saucepan over medium-high heat.
Secondly, saute and stir the mushrooms, onions, and garlic in the butter until tender and aromatic.

Importantly, reserve the cooking liquid in the saucepan, while removing the mushroom mixture.
Next, return the butter (cooking liquid) mixture to medium-high heat.

Furthermore, whisk together the flour and half-and-half until smooth with no lumps; set aside.

Afterward, season the beef with salt and pepper and cook the beef in the reserved
liquid until deliciously browned roughly 5 minutes.

Next, stir the wine, beef bouillon, thyme, basil, oregano, bay leaves, and pepper into the mixture.
Reduce heat to medium-low and simmer for 10 minutes.
Slowly stir in the flour mixture and continue to simmer, stirring occasionally, until the sauce thickens.
This will take 20 to 30 minutes.

Lastly, add the mushroom mixture and stir until all is incorporated and heated through.
