- 1 (16 ounce) package penne pasta
- 1 tablespoon olive oil
- 2 zucchini, chopped
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 2 yellow squash, chopped
- 1 green bell pepper, chopped
- 1 tablespoon crushed garlic
- 1/2 teaspoon black pepper (to taste)
- 1 (28 ounce) can diced tomatoes, drained
- 3-5 fresh tomatoes (diced with juice)
- 2 cups vegan shredded mozzarella, cheese (optional)
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 teaspoon crushed red pepper, (to taste)
First, fill a large pot with lightly salted water and bring it to a rolling boil over high heat.
Next, Once the water is boiling, stir in the penne, and return to the boil.
