Vegan Ratatouille: A Famous Favorite

As a result of simple ingredients, Vegan Ratatouille is simplistic perfection; even if it’s not made by a mouse!

Vegan Ratatouille

First off, made by a mouse or person; Ratatouille is an amazing combination of smoky, earthy eggplant, bitter zucchini, sweet spicy onions, refreshing peppers, and savory tomatoes. Furthermore, with a hint of spice from the garlic, as well as savory parsley; the flavor combinations of Vegan Ratatouille is unparalleled. Moreover, a perfect healthy side, or hearty main, served hot or cold; versatility is its strength.

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried parsley
  • 1 eggplant, cut into 1/2 inch cubes
  • salt (to taste)
  • 1 cup grated Vegan Parmesan cheese
  • 2 zucchini, sliced
  • 1 large onion, sliced into rings
  • 2 cups sliced fresh mushrooms
  • 1 green bell pepper, sliced
  • 2 large tomatoes, chopped

Preparations

The Oven

First, preheat the oven to 350 degrees F (175 degrees C).
Next, coat the bottom and sides of a large casserole dish with 1 tablespoon olive oil.

Cooking

Afterward, heat the remaining 1 tablespoon olive oil in a medium-sized skillet over medium heat.
Next, saute the garlic until lightly browned. Furthermore, mix in the parsley and
eggplant.
Lastly, saute the mixture until the eggplant is soft, roughly 10 minutes.
Finally, season with salt and pepper to taste.

Finishing

Third, spread the eggplant mixture evenly across the bottom of prepared casserole dish.
Next, sprinkle with a few tablespoons of Vegan Parmesan cheese.
Moreover, spread the zucchini in an even layer over top.
As well, lightly salt and sprinkle with a little more cheese.
Next, continue like this with onion, mushrooms, bell pepper, and tomatoes, covering each layer with more salt and cheese.

Finally, place the dish in the oven and bake for 45 minutes, and enjoy!
