Pork Sausages Of Italy: Nonna’s Best!

There is nothing like delicious Italian pork sausages. Nothing! Breakfast with eggs and hash-browns, Lunch to go in a bun like a hot dog, dinner with potatoes and salad or your favorite sides? An Italian sausage is perfect for every meal.

Amazing Italian Pork Sausages

This recipe is traditional as far as a pure pork Italian sausage goes. This recipe does require the use of a meat grinder, or a machine with a grinder attachment. If you do not have one, I’m sure your grandmother does! This delicious recipe will be a go-to in your household. Knowing that you are making your own sausages from fresh, quality ingredients will have you feeling great about devouring them when the craving hits! Furthermore, the versatility in terms of cooking fresh, as well as the ability to freeze them allows you to make a large batch and cook them as you need.

Ingredients

  • 9 pounds pork shoulder, cut into cubes
  • 3 tablespoons garlic powder
  • 1/4 cup fennel seed
  • 2 tablespoons crushed red pepper flakes
  • 4 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 tablespoons dried parsley
  • 1/2 cup dry white wine
  • 15 feet 1 1/2 inch diameter hog casings, rinsed (can substitute for your preferred casing if unavailable)

Preparations

Combine the pork cubes with the garlic powder, fennel seed, red pepper flakes, salt, black pepper, and parsley.

Grind through a coarse plate.

Mix in the white wine and grind again. Stuff into the rinsed hog casings, twisting into 4-inch lengths.

Cover and refrigerate overnight to allow the seasonings to infuse into the meat before cooking or freezing.

These Italian pork sausages are good enough to put the hot-dog industry out of business! Go away from those bland out of the package wieners, and take a trip to Italy with this recipe!
