There are many perfect wines to serve with this dish depending on how you serve it. You cannot go wrong with Vineland Pinot Blanc, 2015. With aromatic hints of smoke, and tasting notes of dragon fruit, and star fruit; this amazingly reviewed and scored Canadian wine is the perfect accompaniment to lean pasta sauce in any capacity. It is under $15. Or, if you enjoy red wine, try The Pinot Project, Pinot Noir 2014. This widely available wine is sold at a bargain price, and furthermore, is incredibly well balanced as far as pinot noir goes.
First, pour 2 teaspoons olive oil into a large saucepan or pot on medium high heat.
Second, oil is hot, add finely chopped yellow onion and saute until translucent. Stir occasionally.
After the onion has become translucent, add the garlic and saute both until you can smell the garlic in the air.
As well, be careful not to let the onions or garlic burn or brown.
Once cooked add the loose turkey sausage meat, or lean ground turkey to the onion-garlic mixture. Stir well and let the meat brown slightly.
Additionally, once the meat has browned, add the canned tomatoes and dried oregano. Let cook for 2 minutes.
Afterwards, add the white wine, and allow to reduce and the alcohol to cook off. Make sure to leave the saucepan or pot uncovered.
Lastly, add the fresh grated Parmesan cheese and stir, folding in most of the basil leaves and green onions as well during this process.
At the end, serve with brown rice, pasta, or your favorite starch; garnish with remaining basil.
You can substitute the wine for chicken or turkey broth if necessary or preferred. Additionally, the protein can be swapped for beef, although turkey is much leaner and gives a lighter eating experience and taste.
Furthermore, adding extra garlic, or your favorite seasonings such as smoked paprika, or salt and pepper is also great.
You will love this healthy, meaty lean pasta sauce. Use this recipe on its own, or as a base for your future pasta sauces.
